Hi, I'm Adam. Father of 2 with a love for cooking, music, yoga & my family - on a mission to create classic festival treats in a healthy & gluten-free way! After a long-winded journey, my wife was diagnosed with Celiacs Disease and we have been on an upward battle to find/create accessible food that is also delicious. To our surprise, it isn't that hard to create all of the classic dishes deliciously!
Introducing Nola's Funnel Cakes - our brand of gluten-free festival treats - wrapped up into a cute little food truck. Nola, my daughter's name, just so happens to be the acronym of our family's names: Nola, Owen, Lindsey & Adam. Perfect for our small family business.

Our mission is to create high-quality funnel cakes & ice cream from local, organic & gluten-free ingredients and have it available at fun events like festivals, music venues, craft shows & weddings!

We didn't either! With awareness has come accessibility in restaurants, grocery stores and local establishments, but what about bars & festivals? Did you know someone with Celiac Disease cannot even have their food cross-contaminated with other gluten or they will become violently ill? Long-term effects include developing other autoimmune diseases, gut issues & cancer. We want to help change the stigma and bring gluten-free to everyone for fun and not just a necessity!
